Thick bread, creamy almond butter, sea salt, and a drizzle of olive oil. This childhood snack, once prepared by her mother, has become the signature offering at Canyon Coffee, the business Ally Walsh co-founded in 2016. Today, patrons queue around the block to taste the toast that defines her brand.

Canyon Coffee: A Recipe for Resilience

The path to this success was forged through profound personal upheaval. In January 2025, Walsh and her son were forced to flee their Altadena home as the Eaton fire ravaged the region. Shortly thereafter, her mother passed away from ovarian cancer, leaving Walsh to navigate a year of displacement across more than a dozen temporary residences.

Despite the instability, Walsh maintained the momentum of her roaster and cafe venture. Canyon Coffee now operates out of high-traffic locations in Echo Park and Brooklyn’s Prospect Heights, where the pace of service averages one order every minute. A new site in El Sereno is scheduled to open this month. Having finally settled into a home in Mount Washington last October, Walsh views the expansion as a necessary personal reset.
